Stuffed Jalapeno Peppers

I saw something interesting on TV last night and decided to hit the kitchen. I mixed up some ricotta, Parmesan, and mozzarella cheeses with one egg. Added some bacon crumbled and stuffed them into cleaned Jalapeno peppers.
I cut the peppers and baked open at 350 for 15 minutes, stuffed with cheese mixture and returned to oven for an additional 15 minutes. This was a killer appetizer and the heat from the peppers was kept at bay by cutting the seeds and pith out and cooking first. Don't be afraid of the jalapeno when cooking.
