Homemade Smoked Sausage Balls

1 1/2# fresh ground pork 1-2 tbsp fresh sage, chopped fine 1 1/2 tsp sea salt 1 1/2 tsp fresh cracked pepper 6-8 jalapenos, seeded and chopped fine 3/4 cup quick oats, pulsed to fine but not powder Fold together gently just enough to mix evenly. Roll into balls and place in freezer on sheet pan for 15 minutes. Smoke indirect for 1 to 1 1/2 hours at 170 degrees under heavy smoke. Balls are done when thermometer reads 160. At game time, place balls in a crock with you favorite sauce.
