Leftover Turkey Hash



Add some leftover turkey, jalapeƱos, potatoes and saute until taters are done. Then add some eggs and cheese. Top with green onions.
Awesome power breakfast.

Bacon, spinach, artichoke dip.


Bacon, spinach, artichoke dip.
Saute spinach, bacon and artichoke with some onion and garlic.
Mix in 1/2 cup of mayo, 1/2 cup of Parmesan cheese and 3/4 cup of mozzarella cheese.
Bake @ 350 for 25 minutes then broil for 4 minutes until brown.

Grilled Salmon, Zucchini, and a Baked Sweet Potato.


Grilled Salmon, Zucchini, and a Baked Sweet Potato.
Grill Salmon just like you would a great steak; high heat, short time.
Place the sliced zucchini on a drizzled with olive oil, sea salt and pepper for 2-3 minutes a side.
very good and healthy dinner.

Serrano Enchiladas


Serrano Enchiladas
1 lb. ground beef
1 onion finely chopped
1 enchilada flavor packet
3 tbsp. water or whatever the packet says
1 (10 oz.) can enchilada sauce
...1 (8 oz.) can tomato sauce
1 1/2 c. shredded cheese
1 pkg. (10) flour tortillas
Brown ground beef,add onion, then simmer with enchilada flavor packet and water. Heat tortillas slightly in micro. Fill each tortilla and roll up. Place rolled tortillas, seam down, in 9x13 pan. Blend together the enchilada and tomato sauce and pour over the tortillas. Top with shredded cheese and peppers. Bake at 325 degrees for 20 minutes.

Veal Parmesan



I have a quick way to make Veal Parmesan, easy.
I start with the prepackaged breaded veal patties. Set them up for a quick pan fry and add my sauce, noodles, and fresh grated Parmesan cheese. Very simple and delicious.
