Roasted Turkey Tenderloin

I started it at 425 for 10 minutes and reduced it to 325 for an hour.
Slice and served perfection.

Brownies With A Kick!

Brownies With A Kick!
We decided that since we had a good harvest of Serrano peppers this year that it might be good to add some heat to our black bean brownies.
These brownies turned out sweet and delicious and then...wait for it....wait for it...Oh yeah there it is; some residual heat from the Serrano's.
1 box (your favorite brownie mix here)
1 can reduced sodium black beans
2-3 Serrano peppers seeded and cleaned.

Strain and rinse black beans and add to food processor with 1/3 can water and peppers.
Mix, pulse, or whatever you can do to blend this into a dark thin batter. No chunks or beans visible.
Add this batter to the said brownie mix and mix well.
Bake as per the box directions or maybe a little longer. Check with tooth pick near the end.
I made them in mini muffin pans for individual edge pieces.
Enjoy!

Go Browns!

Rosemary Pork Loin

We are learning to cook for a family member that needs reduced salt.
Tonight we rubbed a pork loin with Rosemary, basil, and a tsp of peanut oil.
I rested it in my crock pot atop 3 green pepper halves, added 1/4 cup of homemade vegetable stock. Let it go on low for about 6-7 hours to perfection.
I pulled it and cooled slightly before slicing. I removed some drippings and added some whole wheat flour to make a simple gravy.
This will be one of our new favorites.

Smoked Oyster Appetizer

For the game, I made some killer appetizers.
We piled Guacamole on a slice of artisan bread and topped each piece with a smoked oyster.
I made the Guac simple with avocados, garlic, peppers, onion, a bit of salsa, lemon juice and salt/ pepper.

Grilled Mahi Mahi with Butternut Squash

The nice weather invited us to fire up the Weber and enjoy some awesome grilled Mahi Mahi, grilled butternut squash brushed with olive oil, salt, and pepper, and some fresh steamed broccoli.
Grilling fish is easy and tastes so good. Mahi for instance only takes 4 minutes per side at 3/4 inch thick, grilled just like a steak.

Easy White Chicken Chili

It feels like fall outside so I decided to make some White Chicken Chili.
I took a large chicken breast and cooked it in my veg stock until it fell apart. (about 20 minutes) I added the shredded chicken, the homemade veg stock, 2 cans of white beans, 2 jalapeno's from the garden (one red one green), small onion, a handful of pear tomatoes chopped, 3 ribs of celery chopped, and a teaspoon of chili powder to a medium pot on the stove. I simmered it for about an hour and oh damn it's good.

What to do with Leftovers

Tonight I took some leftover cous cous and added some fresh pear tomatoes and broccoli and sauteed for about 5 minutes. I tossed some bread crumbs onto a couple of salmon steaks and broiled whilst the cous cous was finishing. Fresh fish is a lot easier than you would think and it is always delicious.

Baked Restaurant Quality Chicken Wings

We went to Dot's and got some fresh jumbo wings today. I used a sort of "Shake N Bake" to lightly coat them and then baked, dipped and baked again.
These are definitely restaurant quality wings for about $0.35 each.

Easy Chicken Stir Fry

Tonight we had Chicken Stir Fry. We had a ton of fresh veggies and I made a spicy brown sauce from a combo of soy sauce and Jeff's "Porn Sauce" mixed with a spoon of corn starch.
On a side note...If you like hot sauce and you haven't been to Kings Table yet....go try the Porn Sauce.

We had the best fresh tomato basil soup and grilled cheese sandwiches last night.
The soup is pretty easy and you can grill cheese any old way.
