Smoked Salmon Dip

12oz smoked salmon
1 block Neufchâtel cheese, softened
1 tbsp. lemon juice
2 tbsp. grated horseradish
2-3 sprigs flat leaf parsley

Combine salmon, cream cheese, lemon juice, and horseradish with a fork until well blended. Top with chopped flat leaf parsley. Refrigerate if needed. Let sit at room temperature a few minutes before serving.
Serve with good crackers.

Roasted Turkey Tenderloin

Well tonight we roasted a Turkey Tenderloin. I marinated it with some Italian dressing and some dried herbs from our garden. 
I started it at 425 for 10 minutes and reduced it to 325 for an hour.  
Slice and served perfection.

Brownies With A Kick! 
We decided that since we had a good harvest of Serrano peppers this year that it might be good to add some heat to our black bean brownies. 
These brownies turned out sweet and delicious and then...wait for it....wait for it...Oh yeah there it is; some residual heat from the Serrano's.
1 box (your favorite brownie mix here) 
1 can reduced sodium black beans
2-3 Serrano peppers seeded and cleaned.


Strain and rinse black beans and add to food processor with 1/3 can water and peppers.
Mix, pulse, or whatever you can do to blend this into a dark thin batter.No chunks or beans visible.
Add this batter to the said brownie mix and mix well.
Bake as per the box directions or maybe a little longer. Check with tooth pick near the end.
I made them in mini muffin pans for individual edge pieces.

Bill and Kit's Famous Cabbage Roll Casserole

1 small head green cabbage
1-2# ground chuck
salt/ pepper/ 1-2 cloves garlic
1 onion, diced small
1/2 cup uncooked rice
1 can diced tomatoes
1 can tomato paste and 16 oz water
1 can sauerkraut big or small depending on your love for kraut.

Chop cabbage into small bite size pieces and place in big bowl or pot.
Brown meat, garlic, onion, and seasonings.
Add can diced tomato, tomato paste, water, and uncooked rice to meat mixture.
Stir in sauerkraut and add to cabbage.
Stir together well and place in casserole dish to bake at 350 for 60- 90 minutes.
Start uncovered for 20 minutes and then covered for an hour or until rice is done.
