It feels like fall outside so I decided to make some White Chicken Chili.
I took a large chicken breast and cooked it in my veg stock until it fell apart. (about 20 minutes) I added the shredded chicken, the homemade veg stock, 2 cans of white beans, 2 jalapeno's from the garden (one red one green), small onion, a handful of pear tomatoes chopped, 3 ribs of celery chopped, and a teaspoon of chili powder to a medium pot on the stove. I simmered it for about an hour and oh damn it's good.
Tonight I took some leftover cous cous and added some fresh pear tomatoes and broccoli and sauteed for about 5 minutes. I tossed some bread crumbs onto a couple of salmon steaks and broiled whilst the cous cous was finishing. Fresh fish is a lot easier than you would think and it is always delicious.
We went to Dot's and got some fresh jumbo wings today. I used a sort of "Shake N Bake" to lightly coat them and then baked, dipped and baked again. These are definitely restaurant quality wings for about $0.35 each.
Grilled Pollack with fresh veggies and black eyed peas. I put just a sprinkle of "Slap Yer Mama" seasoning on the Pollack and placed on the grill. Oh and of course, I put jalapenos in the black eyed peas.
