Liver Pudding Breakfast

I start by sauteing some onions in a touch of evoo. After onions are somewhat translucent, I add the ring liver with the casing removed. I buy Queen City ring liver pudding because it does not have MSG. Keep a good medium heat until the liver starts to brown. 
Most of the time I'll add cubed potatoes but today I used cooked cous cous. Since the cous cous is more delicate, I waited until the liver was almost done before adding.
 




I served the liver pudding with two eggs atop. It is a favorite of mine and a good substitute to sausage or corned beef hash.

Vegetable/ Beef Soup

I sauteed some beef stew meat from the butcher. Added a couple carrots, 4 ribs of celery, 2 small potatoes, a large onion, two cloves of garlic, 1/2 can corn, 1/2 can green beans, and two tomatoes, diced. I tossed this into a crock pot with two cups of vegetable juice and 1 cup of water. Add some salt and pepper and let it go on low for about 10 hours. It is the best for a cold wintry day.
