Cowboy Caviar

2 cans prepared organic black eyed peas
4 jalapeño peppers
2 cloves garlic, minced
1 tomato, chopped
1/2 onion, chopped
1/3 cup fresh Cilantro leaves, chopped
2 tbs olive oil
Salt/ pepper to taste

Mix all together and refrigerate. Serve with pita, or your favorite, chips.
